2 c of fresh diced pineapple
2 medium sized seeded and chopped potatoes
¾ medium sweet onion, chopped
¼ c of fresh cilantro, minced
1 jalapeno seeded and chopped jalapeno (can be added or reduced depending on the level of heat that is expected from the salsa)
1 tblspoon of olive oil
1 teaspoon of ground coriander
¾ teaspoon of ground cumin
½ teaspoon of salt
½ teaspoon of garlic, minced
