Salsa
1 peeled medium size mango (choose the ripe one so that you can enjoy the sweetness of the mango flesh)
Half of medium size pineapple, peeled and diced
2 tablespoons of red onion, minced
1 tablespoon of jalapeno pepper, minced and seeded
1 ½ teaspoons of fresh cilantro, chopped
2 lime and take only the juice
A pinch of salt
1/8 teaspoon of black pepper, freshly ground
Grilled Chicken
6 ounces of chicken breast meat without the skin and bone
¼ c of pineapple juice
3 tablespoons of fresh cilantro, chopped
3 tablespoons of soy sauce (choose the one with low sodium)
2 tablespoons of honey
1 teaspoon of fresh lime juice
1/8 teaspoon of red pepper, crushed

The cooking process can start by combining the salsa ingredients number 1 to 8 in a bowl. Cover the bowl and put it in the refrigerator for about half an hour. Meanwhile, pound the chicken breasts until it looks like a meat mallet with a thickness of half an inch. Then, mix the ingredients number 2 to 5 of the chicken grill in a large plastic bag with zip top. When they are mixed completely, put the chicken inside the bag and put in the refrigerator for about 30 minutes while you are preparing for the grill.
