This is a recipe of a basic tomato soup. When we talk about basic, we are still talking about dishes that will pamper your taste buds. After all, simple dishes often make the tastiest ones. This basic recipe of tomato soup is so tasty, yet so easy to make. Pair the dish with grilled cheese sandwich and your whole family would love the meal. The pair is perfect for any summer days and night because they are so light and refreshing. However, they can also be served on the other seasons but you may need to switch to the canned tomatoes as unfortunately the fresh tomato plants do not yield beside on summer. But during summer, it is best to avoid the canned tomatoes and always use the fresh ones.

Here are the ingredients:
- 1 tablespoon of olive oil
- 1 tablespoon of butter (preferably unsalted)
- 1 coarsely chopped sweet onion, medium size
- 30 ounce of peeled tomatoes or 1 can of 28 ounce canned tomatoes with their juice (preferably the San Marzano)
- 1 ½ cups of chicken broth or water (if you use the chicken broth, then make sure it is the low sodium one)
- 2 bay leaves
- 1/3 cup of heavy cream
- Freshly ground black pepper to taste
Cooking instruction:
1. Heat the olive oil and unsalted butter in a saucepan (medium sized saucepan should be enough). Make sure that the heat is medium so that you will not overcook it. When you see that the butter is foaming, add a big pinch of salt as well as onion. Then add the black pepper to taste.
2. Cook the mixture until you see that it is softening and the color is just turning to browns. This should not take more than 15 minutes.
3. Add the fresh or canned tomatoes along with the juice. Stir the saucepan so that the tomatoes are crushed.
4. Add the broth or water, if you prefer, and also the bay leaves. Bring the mixture to a simmer and not boil. By the time it simmers, the tomatoes should have began to fall apart. This should take about 10 minutes.
5. Remove the saucepan from the heat. Do not forget to discard the bay leaves as they are only part of the seasoning and not for eating.
6. Allow the soup to cool a little by placing it in room temperature before using the blender to reduce it into puree soup.
7. Bring it back to the stove, but this time over low heat. Stir in the cream and then taste. Feel free to add some seasonings.
