Ingredients:
2 lbs of quartered and cored firm green tomatoes
1 medium yellow peeled and chopped yellow onion
1 green Anaheim chilling pepper that has been seeded and quartered
4 jalapenos or serrerano peppers that have been steamed and quartered
3 coarsely chopped garlic cloves
1 teaspoon of salt
0.25 teaspoon of ground cumin
1 tablespoon of olive oil
3 tablespoons of water
0.5 tablespoon of fresh lemon zest
1 tablespoon of sugar or honey
0.3 cup of loosely packed cilantro that have been coarsely chopped
Cooking instruction:
Mix onion, green tomatoes, garlic, salt, chili peppers, cumin, water and olive oil in a stock pot. Bring everything in the pot to a boil and then cook on low to medium heat with cover on for approximately 10 minutes. Stir the content occasionally in order to avoid sticking to the bottom. If you see that it needs more water, then just add a little so that you can maintain the most minimal broth. This is essential in order to keep the taste to the maximum.
Stir in the lemon juice, lemon zest, honey or sugar and also the cilantro. Simmer them for about 5 minutes, then taste it. Adjust the seasoning when you think it is necessary.
