Have you ever craved for tomato jam in the middle of winter? Or maybe even have an abundant amount of tomato harvest during summer that you do not know what to do with them anymore? Well, if you do, then maybe it is time to make yourself cans of tomato jams. Tomato jams are one of the best ways of processing tomatoes. Of course you can also create other types of tomato processing such as tomato paste, tomato puree and tomato sauce. However, they are not the same as tomato jams. The tomato jam is simply delicious to consume with cheese and crackers and the whole family just love this healthy snack.
Then the next question would be if the tomato jam is simple enough to create without any help? Or weather there is many more advanced recipes to create different flavors? The answer to both questions is yes. There are recipes for simple tomato jam, the most basic type of recipe. But there are also other types of recipes that are more intricate and will take more time and efforts to make. So let us start with the easiest one, the simple tomato jam.

For the ingredients, you will need to prepare these items:
-2 pounds of Roma tomatoes which need to be quartered and cored
-1 tablespoon and 0.5 cup of packed light brown sugar
-Salt and pepper to taste
-3.5 tablespoons of fresh lemon juice
-0.5 cinnamon stick
First, mix tomatoes, sugar, salt, pepper and lemon juice in the fruit processor. Process those ingredients until you have finely chopped fruits but with sugar not completely dissolved. This will take around 6 second pulses. Then pour the mixture to a nonstick skillet with the size of 12 inch and add the cinnamon stick. Bring everything to a boil over high heat. Cook for about 9 minutes until you have seen that the liquid have reduced. You need to stir the mixture occasionally. Reduce the heat to medium high and then simmer vigorously. Once the mixture does not contain so much water, then you will need to stir it more often. In 10 – 18 minutes, you will have the consistency between sauce and paste. This is the perfect consistency for jam.
Once done, you will need to cool it off to a room temperature. Take out the cinnamon sticks and if you still have some lemon juice remaining, then you can pour it in. Taste the jam and add some more salt and pepper if you think that you still need more taste. When you think that it is perfect, put it in the refrigerator up to 2 weeks.
