Who does not love the old fashion tomato pie recipe? This traditional recipe has been the favorite of so many families until now. This summer dish is just a perfect for all members in the family, both young and old. The recipe is made of fresh tomatoes and an assorted of herbs.
If you have not tried to serve your family with this satisfying dish, then it is time you start a new old fashion tradition in the family. However, you must spend quite some time in order to be able to create this dish. In fact, you will need about 3 and a half hour to finish the recipe from scrap.
Here are the ingredients that you will need to prepare:
Piecrust:
1.25 cups of all purpose flour
0.25 cup of cold vegetables that have been cut into pieces
4 tablespoons of cold butter that has been cut into pieces. For best result, use the unsalted butter.
Half tablespoon of fine sea salt.
3 – 4 tablespoons of ice cold water
Filling:
2.25 pounds of assorted heirloom tomatoes which are sliced thinly
1.25 teaspoons of kosher salt
1 chopped sweet onion
1.25 tablespoons of divided freshly ground pepper
1 tablespoon of canola oil
Half a a cup of assorted fresh herbs, chopped
Half a cup of freshly grated cheese. It is recommended to use Gruyere cheese
0.25 cup of mayonnaise
Half a cup of parmigiano reggiano cheese
Cooking instruction:
1. To prepare the piecrust, you will need to process the first four ingredients in the food processor until you have a coarse meal mixture, then add the ice cold water. Continue the process until you have dough form. Take the dough and shape it into a dish, and warp it in a plastic wrap for about 30 minutes. Afterwards, roll it into 1/8 inch thickness.
2. Preheat the oven until it reaches a temperature of 425 degree Fahrenheit. Meanwhile, press the dough to a 9 inch pie plate and trim it to an inch larger than the pie plate. Chill it for 30 minutes.
3. Line the piecrust with aluminum foil and fill with dried beans to keep the crust from bubbling up. Then bake for 20 minutes before removing the weights and foil, then bake again for another 5 minutes.
4. The filing will by placing the tomatoes on a paper towel then sprinkle salt and let them be for 10 minutes.
5. Sautéed onion and a quarter tablespoon of salt and pepper. Then make a layer of tomatoes, herbs and seasoning on the pie.
6. Stir the cheese and mayonnaises and spread over the pie.
7. Bake again for 30 minutes on a temperature of 350 degree Fahrenheit.
