okra-tomatoes
1 pound of rinsed and trimmed okra
3 tablespoons of olive oil
1.5 cup of red onion, finely chopped
1 tablespoon of minced fresh ginger
1 tablespoon of freshly ground black pepper or grains of paradise
0.5 tablespoon of freshly ground cardamom
Cooking directions:
Cut the okra in half and the set them aside. If you find that the okra has pods that are longer than 4 inches, you can cut them in half crosswise, then you can cut them lengthwise.
Use a medium saucepan to heat the olive oil. Wait until it simmer before you add the onions, and salt. Cool them for about 4 minutes or until the onions are turning gold. Now it is time to add the garlic and wait for another minute for the garlic to cook.
Next is to add the tomatoes and the wait until the mixture is boiling before decreasing the heat to low. Then add the pepper, ginger, cardamom and okra.
