If you are preparing to cook the tomato relish, you will have to prepare 2 hours for the whole process. Here are the ingredients that will make 12 pints:
24 large green tomatoes
3 halved and seeded red bell peppers
3 halved and seeded green bell peppers
12 large onions
3 tablespoons of celery seed
3 tablespoons of mustard seed
1 tablespoon of salt
5 cups of white sugar
2 cup of cider vinegar

Cooking Instruction:
Take your food processor or grinder to reduce the tomatoes, red bell peppers, onions and green bell peppers until they are coarsely y grinded. If everything is not possible to be grounded at once, you may need to do it in batches.
Line a cheesecloth and large colander. Place them in the sink or in a large bwl and then pour the grinded mixture so that they will drain. The process may take an hour.
Then combine the tomato mixture with mustard seed, celery seed, sugar, salt and vinegar in a large stockpot made of non aluminum material. Afterwards, bring the pot to a boil on low heat and stir frequently.
Then sterilize jars and lids that will be used for the tomato relish. Pack the tomato relish in these hars and make sure that there are not air pockets and spaces.
