When it comes to tropical themes, what would be better to serve if not pineapple or coconut or even both?
If you want both fruits to be part of the ingredients of your cake, but you only have about one hour to prepare it, then the Pineapple Coconut Cake would be the best choice. It is true that you can create this moist cake from scratch n only one hour or even less as you only need 25 to 30 minutes in the preparation time and another 30 minutes on the cooking time.
First thing first. Run to the grocery and make sure that you have all of these ingredients:
2 c of flour
2.5 teaspoons of baking powder
2 eggs
3 c of white sugar
20 ounce of pineapple, crushed but undrained
½ cup of butter
1 cup of pecans or walnuts, chopped and lightly toasted
1 cup of coconut
1 tablespoon of vanilla
½ teaspoon of lemon juice
After all the ingredients are compiled, then preheat the oven until it reaches 350 degrees Fahrenheit. Take a baking pan with a size of 9 x 13 cm and grease it with butter or margarine. Leave the pan and take a bowl to combine baking powder and flour. Mix both ingredients by using a wire whish. When you feel that they have mixed nicely, put the bowl aside. Take a bigger bowl and combine 2 cups of sugar, eggs, pineapple, coconut, vanilla, lemon juice, and walnuts or pecans. Mix it well and then pour the flour and baking powder to the second bowl. When they are mixed well, pour everything to the pan and bake in the oven for 25 – 30 minutes.
Meanwhile it is baking, mix one cup of sugar, butter and evaporated milk. Use a heavy saucepan to boil the three ingredients. Make sure that you stir it constantly for about 3 – 4 minutes. Afterwards, remove the pan and wait until the cake is ready. Pour the last set of ingredients on top of the cake as an icing. Wait until your very own Pineapple Coconut Cake to cool off before you serve it to your guests.
