Who does not love a classic chocolate chip cookie? Everyone does. But there will be times when it is just simply to boring to eat. But cookies are always hard to resist. Another recipe, a healthier one can do the trick, the oatmeal pineapple cookies. Not only does oatmeal gives certain flavor and texture to the cookies, it is also very healthy.
Even though we know just how healthy it is to consume oatmeal, but when it is always prepared the same way, it will be so boring. On the other hand, when processed into cookies, the oatmeal can create more tender cookies that have a slightly nutty feeling that can be combined to any other ingredients. Here is one of the combinations for the cookies.
Ingredients:
1.5 cups of all purpose flour
1 teaspoon of baking soda
0.5 teaspoon of salt
0.75 cup of butter (butter should be put in room temperature before cooking)
1.5 white sugar
2 eggs (choose the large ones)
2 teaspoons of vanilla extract
2 cups of oats (it is better to choose the quick cooking ones)
0.75 cup of shredded coconut (can be sweetened and can also be unsweetened, depending on your preference)
0.3 cup of dried pineapple, chopped coarsely
0.3 cup of dried cherries
0.5 cup of macadamia nuts, chopped coarsely
Cooking instruction:
1. After checking all the ingredients, heat the oven until it reaches 350 Fahrenheit. Put a baking sheet in a lining position with the parchment paper.
2, Take a medium sized bowl and mix together flour, salt and baking soda. Whisk the three ingredients until mixed evenly.
3. Take a large sized bowl and mix together sugar, cream and butter with a mixer. Stop when you see that all the ingredients have turned light.
4. Beat the vanilla extract and eggs in the large bowl until they are mixed nicely.
5. Gradually pour in the mixture from the medium bowl with flour, salt and baking soda in it. Do not stop the mixer when they have not mixed nicely.
6. Next, stir in the shredded coconut, oatmeal, dried cherries, macadamia nuts and also the dried pineapples. This is when you have finished dough.
7. Shape you finished dough into balls in the size of 1 inch in diameter and immediately put them on the baking sheet.
8. When you have finished with all the dough, bake the small balls in the oven. Remember that you must maintain the temperature of 350 Fahrenheit. Wait for about 13- 15 minutes until the small balls turn to light brown cookies.
9. Cool the cookies for 4 minutes before serving them.
