YES! It is time for salsa. If you think that this is the dance, then you are wrong as we are going to talk about the salsa dish. This salsa dish is not going to be like any regular salsa as it will dance in your mouth. Is it difficult to make? Of course not. This recipe is also very versatile so that you can pair it with other dishes or other ingredients. I am going to share you the recipe and you can feel free to add what you want to add, and loose what you do not like. Just remember to use all the fresh ingredients to make you feel like it is the freshest day of the year or the first day of summer.
If you want to be able to serve 12 people, then these are what you need to prepare:
3 slices or rings of fresh pineapples (or half of canned pineapples but the fresh ones are much more recommended because they are more nutritious)
1 red bell pepper
1 jalapeno pepper (or more if you prefer spicier salsa)
2 peeled, seeded and then diced mangoes (choose the large ones)
1 diced small red onion
¼ c of chopped cilantro
1 lime juice
½ teaspoon of lime zest
A little note is to make good dice shapes during the cutting in order to have a better presentation. When it comes to salsa, it is the cutting that matter most. All off the ingredients have their own colors that will look great when mixed together. Okay, after everything is ready, let us move to the first step, heating the grill at the medium to high heat. Oil the grate lightly, be careful as not to put too much and you will get an oily result.
Then cook the red bell pepper, pineapple and jalapeno pepper on the grill. You need to turn them frequently. You will know when they are done when the pineapples have mild marks and all the peppers are turning brownish. This process will take about 3 minutes for the pineapples but will take more for the peppers, around 5 to 7 minutes. After they are done, put everything aside and the peppers need to go in a paper bag to cool off. When the peppers are cool, gently rub their skins with paper towels and then cut them in half. The seeds need to be removed first. Cut everything in small dice and put them in a bowl. Take the diced mango, cilantro, red onion, lime juice and zest to the bowl and stir. Put a plastic cover over the bowl and put the bowl in the refrigerator for a night.
