Kraft has been nice enough to give us a peek on a tasty pineapple cheesecake recipe. This is a great recipe if you want to have a cake without having to bake it in the first place. Here is the list of ingredients to prepare the cheesecake:
20 crushed wafers (the end result should be about one cup of crushed wafers)
3 tablespoons of melted butter or margarine
½ tablespoon of ground cinnamon
1 env of unflavored KNOX gelatin
1 can of crushed and drained canned pineapple (keep the liquid as it will also be used to create the cake)
3 packages of softened cream cheese
¾ cup of white sugar
8 oz of thawed whipped cream
After you are sure that you have all of the ingredients, then you can start the cooking process by mixing the cinnamon, unsalted butter and the wafer crumbs. When everything mixed perfectly and evenly, presses the mixture to the bottom part of the cooking pan. Use a 9 inch spring form pan to bake. Leave the pan and start sprinkling gelatin on the pineapple juice. A small saucepan would be enough to serve the purpose. Leave the second mixture for about one minute before you cook it on a very low fire for 5 minutes. Stir occasionally until you see that the gelatin has dissolved to the juice.
Next, turn to the softened cream cheese and beat it with sugar. Use a large bowl and a mixer so that the two ingredients can blend nicely. Once finished, put in the refrigerator until you see that the mixture has slightly thickened. Continue the process by whisking the pineapple and whipped cream and mix it to the cream cheese mixture. Once they are well blended, pour the mixture over the crust that we put in the pan. Leave everything in the refrigerator for 5 hours before the pineapple cheesecake is ready for the whole family to enjoy.
