A dessert is not a must but a meal is not perfect without a nice dessert. Nice does not mean extravagant and you can create something nice without having to spend so much time and money on preparation. The pineapple pound cake is one of those cakes. You only need one hour and 5 minutes in total to prepare the cake. The preparation step before the cooking should not take more than 15 minutes and can even be faster if you are used to making the cake and or the cooking time, you will need 50 minutes. It is so easy to prepare yet so delicious and nutritious as you will have lots of pineapples in the cake and we all know that pineapples have so many vitamins and proteins that our body needs.
The ingredients for the pineapple pound cake are:
1 drained large canned pineapple (juice should be reserved)
1 box of pound cake mix
2 large eggs
1 small canned pineapple
0.25 cup of water
05 cup of brown sugar
2 tablespoons of butter
Before you start processing the ingredients, you need to preheat the oven so that it will reach 350 degree Fahrenheit and then spray your 9x5 inch loaf pan with the cooking spray. Remember to spray the pan generously so that the cake will not stick. Next, take a large bowl to combine cake mix, the big can of pineapple juice and eggs. Use an electric mixer for about 30 seconds. Then, change the speed from slow to medium and beat all the sides for abot 3 minutes. Take the chopped pineapple and then stir in the mixture. Afterwards, pour everything to the pan and put it to the oven.
You will need about 45 to 55 minutes to cook the batter in the oven. Another way to know if the batter is ready or not is by sticking a toothpick to the cake and to see that it can come out clean. If you still have some batter sticking to the toothpick, it means that the cake needs some more time in the oven.
Take a small pot and then combine the second pineapple juice with water over a medium heat. Add the butter and sugar until the mixture simmer. Put in the 3 pineapple rings for about 5 minutes or until you see that the sauce has thickens before you remove from the heat. Arrange these rings on the cake before you serve it.
