When away from home, many children would miss the family dinners and the dishes being served. One of the most commonly missed dishes is the homemade tomato soup. Homemade tomato soup usually taste so much better than those sold on the restaurant because to create a delicious bowl of tomato soup, one must choose the best tomatoes, the one with deep red tomato classic color. These tomatoes have sweet juice and thin skin. If not chosen with care, then the end results would not be as expected.

Ingredients
1 kg of ripe tomatoes
1 medium size onion
1 small size carrot
1 celery stick
2 tablespoons of olive oil
2 tablespoons of tomato puree
A pinch of sugar
2 bay leaves
2 pints of hot vegetable stock
Directions:
1. Prepare the vegetables by pulling off the vines of the tomatoes, if they still have any. Afterwards, cut those tomatoes into quarters and cut off the hard cores in the middle part as they will not be soften in the cooking process and will give you hard bits in the soup. Next is to peel the onion and carrot then chop them both until you get small pieces. Do the same chop to the celery so that you may have even sizes.
2. Put the olive oil in a large pan and heat the pa over low heat. Wait until you see that the heat is rising before you put in the onion, celery, and carrot. Mix these ingredients together using a wooden spoon and cook them until you see that the vegetables have become soft. This process should not take more than 10 minutes. In the process, remember to stir at least three times in order to make sure that the vegetables will not still at the bottom of the pan.
3. Put in the tomato puree and see that the content of the pan started to turn red. Next is the rest of the tomatoes, sugar and just a little grinded black pepper. Tear the bay leaves and put them into the pan. Stir everything and let the mixture stew for another 10 minutes. Shake the pan for a couple of times to make sure that everything is well mixed before pouring in the hot stock. Cook it again for another 25 minutes.
4. Remove from the heat before serving. This soup can be served hot or chilled.
