We cannot deny that pineapple is among the most versatile food, not to mention healthy. There are so many food that you can make with pineapple to make everyday seem special and holidays seem even more special. Pineapple upside down cake and also the pineapple bread pudding are two of the most loved dishes, especially for the children. And even though the fruit makes us think more of summer days, but there are some pineapple dishes that can be perfect for every season like the winter of the holiday season. The dish is the scallop pineapple dish.
If you are not familiar with the dish, then you should definitely try to create this dish to be served for the holidays. Not only that the dish is just so difficult to resist, but it is also a great pair for the ham dinner. Hmmm.. Even the thought of the dish make my family cannot wait for the next holiday dinner.
Here is the shopping list before you can make the dish:
1 can of drained can pineapple
4 cups of cubed white bread without the crust
1 stick of butter
1 cup of white sugar
3 large eggs
¼ cup of fresh milk
¼ cup of raisins that you can soak in warm water for aout 2 – 3 hours before baking
¼ cup of golden raisin
½ teaspoon of cinnamon
¼ teaspoon of nutmeg

When you are done with the shopping then you can preheat the oven until it reaches 350 degrees Fahrenheit. Then, toast the cubed cups on a baking sheet for about 5 minutes. Afterwards, remove it from the oven and put it aside. Increase the heat of the oven until it reaches 375 degrees Fahrenheit. Meanwhile, mix the cream butter, milk and sugar in a medium sized bowl. Once they are mixed, put in th eggs one by one until they are perfectly mixed. Remember that the batter should be well mixed before you add another egg.
Continue the process by combining raisins, pineapple and also all the other spices. Fold in the cubed white breads and stir them until the result is like an incorporated liquid mix. Bake this mixture in the oven for about 15 minutes. Make sure that the temperature of the oven is at 375 degrees Fahrenheit. After 15 minutes, lower the temperature to 350 degrees and then leave the mixture for another 30 – 40 minutes or until you see that the top is slightly brown in color and crispy.
