6 pounds of plum tomatoes
¼ cup of extra virgin olive oil and 1 additional tablespoon that is separated from the rest
1 tablespoon of kosher salt
½ chopped medium sized onion
1 minced large garlic clove
1 teaspoon of red pepper flakes
2 cups of fresh basil leaves
½ teaspoon of dried thyme
After you thick all your shopping list, you can get ready to cook the soup. After all, it is not a long shopping list. The first thing to do is to turn on the oven and heat it until it reaches 400 degrees Fahrenheit. Meanwhile the oven is heating, you can cut the tomatoes in half and then arrange them in a large baking sheet sizing 10 x 16 inch. After you finish, drizzle the extra virgin olive oil on the tomatoes, then sprinkle the salt. Make sure that all of the tomatoes are evenly coated with both oil and salt. Put the baking pan in the oven and roast the tomatoes in the pan for about 50 -55 minutes.
