These types of desserts are absolutely healthy but they are not so delicious. As a result, many children will not be fooled to be taking these desserts. If you want to create a dessert that is delicious and healthy, you can create this recipe of carrot pineapple cake. Before you can actually start the process, you need to run to the grocery store and buy these ingredients:
For the cake:
2 cups of granulated sugar
1 1/3 cups of vegetable oil
4 large eggs or 3 extra large eggs that is stored in room temperature
1 teaspoon of pure vanilla extract
2 ½ cups of all purpose flour and another tablespoon of the flour
2 teaspoons of grounded cinnamon
2 teaspoons of baking soda
1 ½ teaspoons of kosher salt
1 cup of raisins
1 cup of chopped walnuts
1 pound of grated carrots
For the frosting:
¾ pound of cream cheese that is stored at room temperature
½ pound of unsalted butter stored at room temperature
1 teaspoon of pure vanilla extract
1 pound of sifted confectioners’ sugar
For the decoration:
½ cup of diced fresh pineapple
Cooking directions:
1. For the decoration, you will need to preheat the oven until it reaches 350 degrees F. Then butte r2 round cake pans and the flour pans.
2. For the cake, you will need to bet oil, eggs and sugar in a bowl until mixed, then add the vanilla. Take another bowl to mix flour, baking soda, salt and cinnamon.
3. Mix the two bowls and then add the raisins and walnuts while folding the pineapple and carrot. Afterwards, add the batter and mix them all well.
4. Divide the batter to the two pans and bake them for 60 minutes. Allow the two pans to cool before you apply frosting.
5. For the frosting, make a mixture of vanilla, butter and cream cheese. Once all of them are combined, add the sugar until they are mixed well.
6. Make a layer facing upward on the flat plate or the cake pedestal. Use a spatula or knife to spread the frosting on the top. Then, on the second layer, spread the frosting evenly on the top of the cake and also on the sides. When you have finished with all the frosting, you can arrange the diced pineapple in order to decorate it.
