This recipe of pineapple cheesecake can surely make your guests roar with delight. Here is the list of ingredients:
For the cheesecake
- 6 tablespoons of melted butter
- 24 crushed graham crackers
- 0.25 cup of white sugar , 1 cup of sugar and 2.25 cups of white sugar (separated)
- 38 ounce of softened cream cheese
- 4 large eggs
- 1 tablespoon of vanilla extract
- 0.25 tablespoon of salt
For the pineapple glaze:
- 1 can of undrained crushed pineapple
- 0.3 cup of sugar
- 3 tablespoon of cornstarch
- 1 beaten egg
- 1 tablespoon of butter
To create the cheesecake, take a medium bowl and combine the first cup of sugar and the graham cracker crumbs. Then stir in the butter. This mixture is like corase sand. Pour and press the mixture in the bottom of the pan and bake it for about 10 minutes in an oven of 350 degree Fahrenheit. Take it out and leave it to cool for a while before you add the filling.
Use a mixer to beat the cream cheese until you get a fluffy and light result. Add the sugar to the cream cheese and mix them well. Afterwards, add the eggs one by one until they are all mixed well. Add the salt and vanilla to the mixture and then pour everything in the first mixture. Again, put everything in the oven for another 50 minutes.
While waiting for the baking process, you can create the pineapple glaze by draining the pineapple, but keep the juice. Add water to the juice so that everything is about ½ a cup. Combine the juice, sugar, pineapple and cornstarch in a pan. Cook them on a medium heat but never stop stirring until they become a thick mixture. Add the butter and egg to it and continue the cooking process for about 2 minutes.
When the glaze is done, spread it on the cheesecake that is now already cooled. You can put in the cheesecake into the refrigerator for some time after the baking so that it is cooled completely. After glazed, put the cake bake to the fridge overnight before served.
