When I was younger, I thought that red in tomatoes mark their maturity and therefore, I only buy red tomatoes. I never even glanced on the racks of green and yellow tomatoes because I thought that those other color tomatoes are not as sweet as the ripe red ones. Now I realized that this is only partially right. The color of the tomatoes does tell about the taste of their meats, but green tomatoes do not mean that they are not ripe. They are simply from another variety. After all, tomatoes are among the plants with so many varieties. As for the color and taste, here is the explanation:
Pink and Red Tomatoes
Red is the most common tomato colors but there are also those with lighter red and pink. These classic tomatoes are usually sweet and acidic at the same time. Both flavors are balanced. This is the perfect flavor for those who do not love too much sweet.
Black and Purple Tomatoes
Have you ever seen the black and purple tomatoes? If you have not, then it does not mean that there are no such things as the darker color tomatoes. The darker colors also include maroon, purple and also brown. All the dark color tomatoes have similarities when it comes to taste. These tomatoes have smoky an almost smoky sweetness to them. They have a smaller amount of acid if compared to the red tomatoes. So the sweet teeth can go on and buy these colors.
Yellow and Orange Tomatoes
Those of the lighter colors, like yellow and orange would have uniqueness in taste. They have very low level of acid, they are mild and also sweet. These kinds of tomatoes may be the one that can be perfect for raw snacks and they can also make a great reminder that although often called vegetable, but botanically they are fruits.
Green Tomatoes
Although for the red types, the green color signifies the immaturity, but for some tomato varieties such as the Green Zebra, green is their color even when they are ripe. If you think that the green tomatoes are more acidic than the red ones, then you are wrong. They may not be as sweet as the yellow and orange ones, but they have less acid than the red once. This is why they make great sweet tarts.
White Tomatoes
The white tomatoes, although not really white, maybe the sweetest among all the other colors with very low level of acid.
